Chicory is a plant that grows wild in many parts of Israel and the surrounding regions. Its scientific name is Cichorium intybus. It has bright blue flowers and leaves that can be eaten as a vegetable. Some scholars suggest it may have been one of the bitter herbs used in ancient times, though this is uncertain.
